Marriott flags surge in demand for local signature dishes in Asia Pacific dining outlook report
MAR•Marriott’s Future of Food 2027 report, covering Asia Pacific excluding China, says 95% of surveyed properties identified local signature dishes as the biggest trend in their markets.

Marriott’s report also found nearly half of surveyed properties saw rising demand for lounges, bars and outdoor venues. All surveyed restaurants and bars in Thailand used AI, while 58% of properties reported average fine-dining experiences lasting 1.5 to 2 hours.
